Funfetti Protein Cookies
I’ve recently been on a Complete Cookie kick – they are so convenient as a pre-workout breakfast in the morning! However like any kind of packaged protein product, they can get pricey. Last week I picked up a bag of protein pancake mix (Flap Jacked) that was on sale, and I loved it! I noticed on the back that they had a recipe for cookies…so I thought I’d give it a go with my own recipe, to create my own version of Complete Cookies!
I’m SO happy with how these turned out. They’re really tasty and have the flavor and texture of a cookie, even more-so than the Complete Cookies.
The macros are AWESOME!! My diet right now is low-carb and high protein. One of these cookies which is very comparable in size to a Complete Cookie, has 16.5g of protein and 15g of carbohydrates, compared to a complete cookie which has 16g protein and depending on the flavor, between 46-55g carbohydrates. So for me, these are definitely a winner!
Like a lot of the recipes I create, I like to leave room for your own personal touch. I chose mini chocolate chips and rainbow sprinkles to make funfetti cookies (one of my favorites), but you could 100% change up the mix-ins to create your favorite cookie! Now that I have an awesome base recipe, expect to see lots of fun flavor combinations! I hope you enjoy these as much as I have!
-1 stick unsalted butter or ½ cup coconut oil
-1 tsp vanilla extract
-2 eggs plus 1 egg white
-2 ¼ cup protein pancake mix (I used Flap Jacked Buttermilk)
-1/2 tsp baking powder
-1 tsp baking soda
-1/2 cup dark mini chocolate chips
-1/4 cup rainbow sprinkles
1. In a large bowl, combine butter or coconut oil, protein powder, and vanilla extract. Cream until fully combined.
2. Add eggs and egg white, mixing until fully incorporated and the mixture is light and fluffy.
3. Add dry ingredients, and gently fold together until a dough forms. Be careful not to over-mix!
4. Gently fold in mix-ins.
5. Bake for 10-15 minutes in a 350 degree oven. Let cool and enjoy!
