No matter the time of year, I love tropical flavors - especially frozen. They are especially special and delicious in the cold seasons. I think it reminds me of going to Aruba with my family during winter school vacation when I was a kid.
The other day I saw some amazing pineapples and coconuts in the grocery store, and knew I wanted to use them in a recipe. I wasn't really feeling a smoothie, so "nice" cream seemed perfect! This recipe was seriously SO easy and SO delicious, I know it's going to be a new staple in the freezer.
The beautiful thing about this recipe is that there are NO added sugars or sweeteners! You can really taste the natural sweetness of the fruit, and the healthy fats in the fresh coconut meat add just the right amount of creamy-ness that you want in an ice cream.
*In my recipe I used a touch of coconut milk to help everything blend together, but I think a touch of rum would work perfectly as well...boozy ice cream? Yes please!!
-1 cup fresh chopped pineapple
-1 medium banana
-1/4 cup fresh coconut meat
-1/4 cup coconut milk or other dairy alternative of choice
1. Prepare fresh pineapple, coconut, and banana by peeling/chopping as required, and freeze for at least 4 hours until frozen solid.
2. In a powerful blender, combine fruit and milk. Blend on high until a creamy soft-serve ice cream has formed.
3. Either enjoy right away, or store in the freezer in a sealed container.
