Breakfast bars are great for busy weekday mornings, and they're especially great if they're tasty. My parents live in Cape Cod, and Cape Cod is famous for cranberries. I've missed seeing cranberry treats everywhere since moving to Virginia, so thought it would be great to work them into a recipe.
At the bakery I used to work at, we always had cranberry white chocolate cookies - a Cape favorite. These meal-prep friendly bars are hearty, full of fiber, nourishing, and will keep you full all morning until lunch.
Just a little bit of white chocolate and cranberries go a long way, keeping the added sugars low. Orange zest and slivered almonds cut through some of the sweetness and add a great extra level of flavor.
The base of these bars are really basic, leaving you room to customize with your favorite flavors and textures.
-1 tsp. vanilla
-1 3/4 cup oats
-2/3 cup protein powder
-1/2 cup whole wheat flour
-1 tsp baking powder
-1/2 tsp salt
-1 tsp orange zest
-1/3 cup white chocolate chips
-1/3 cup 50% less sugar craisins
-1/3 cup slivered almonds
1. In a large bowl, mash three ripe bananas until they are smooth. Add in eggs and vanilla, and mix until thoroughly combined.
2. Fold in dry ingredients until just combined.
3. Gently combine batter with orange zest, craisins, almonds, white chocolate, and orange zest.
4. In a 9x9 greased pan, bake the bars in a 350-degree oven for 30 minutes, until lightly golden brown and firm to the touch.
