Frozen PB&J Bites

It is hot in Virginia. Very hot. In my 2 months here, all I’ve wanted to eat is frozen foods. However as much as I’d like to eat soft serve every day, that probably wouldn’t fit into my macros.

I love frozen bananas (especially chocolate covered), but thought I’d switch things up a bit with these frozen PB & J banana bites! Bananas are a great source of potassium, peanut butter is full of healthy fats, and frozen raspberries make a great low-sugar alternative to jam. Make a big batch, throw them in your freezer, and you’ll be ready for the next heat wave.

Ingredients

-1 banana

-1 T peanut butter

-1/4 cup frozen raspberries

Instructions

  1. Slice bananas into thin disks, and freeze until solid.

  2. Once frozen, heat peanut butter in the microwave for 15-20 seconds, until slightly runny.

  3. Top each banana with peanut butter and a few crushed frozen raspberries.

  4. Freeze until solid, and enjoy!
