Best Banana Bread
Banana bread is one of my favorite comfort foods – and my favorite recipe is the one my mom has made for my siblings and I for over 28 years. Banana bread isn’t generally the most nutritious recipe, so I decided to give it a makeover.
This banana bread is packed full of whole grains and fiber, protein, low in sugar, customizable, and seriously doesn’t taste “healthy” what-so-ever. It’s perfect for breakfast, a snack, dessert…you name it.
-3 ripe bananas
-1 tsp vanilla extract
-1 T honey
-3/4 cup vanilla protein powder
-1 cup whole wheat flour
-1 cup oats
-1 tsp. salt
-1 tsp. baking soda
-1/2 cup desired mix-ins (I used dark chocolate)
In a large bowl, mash bananas until no large chunks remain.
Add eggs, vanilla, and honey, and mix until well combined.
Add all dry ingredients (except for mix-ins), and gently fold until the batter is just combined. Be sure not to over-mix!
Fold in mix-ins, and pour batter into a greased loaf pan.
Bake at 325 degrees for 40 minutes, until the top of the loaf is golden brown and firm.
Let cool, slice, and enjoy!
